
I've been eating wraps like its going out of style. At least one a day for the last 2 months. It's time I switch up my ingredient list. Came across these really good looking lettuce wraps today.
The wraps illustrated contain: Strips of cucumber surrounded by a mackerel and coriander filling, made by mashing a tin of mackerel with a little mayonnaise, lemon juice, salt and pepper then stirring through some chopped coriander. Sliced ham, celery, cress, micro greens and mustard mayonnaise.
Good choices for the main filling are:
Sliced meat, salmon, tuna, mackerel or prawns, Meat, fish or nut pâtés, Hard boiled eggs, Avocado, Hummus, feta or goat’s cheese. Celery, Cucumber, Tomatoes, Radishes, Sliced red onion, Spring onions, Sliced peppers, Grated carrots, Sprouted seeds, Cress or Micro greens, Olives, Herbs – dill, basil, coriander, mint, parsley.
To make the wraps
- Take a lettuce leaf and place it so the underside of the leaf is uppermost.
- If necessary, carefully crush the centre stalk, using your thumb.
- Spread the filling onto the lettuce leaf.
- Starting from the base, tightly roll up the leaf.
- To make sure that the wraps don’t unroll you could tie them with chives [see above] or secure the join with a cocktail stick – but take care that you remove the sticks before eating them!
